A Brief Run-Down...

     As the first post on this blog I'll give you a brief run-down and then will begin to post daily recipes (breakfast, lunch, dinner & possibly snacks) that are successful (and maybe not so successful if it's helpful) that I can get my husband to eat while being treated for cancer.

     My husband is being treated for Squamous Cell Carcinoma with chemo and radiation.  The radiation is in the area from his nose down to his lower chest which causes dry mouth (kills the saliva glands), really bad sore throat, loss of appetite and fatigue to name a few, therefore, eating is going to get harder and harder as we progress through this treatment.  We are just now finishing week 3 and he's just started in the last two days having a harder time eating.  He wants mainly soups and really soft food with gravy or sauce to help push it down followed by a drink.  The sauce cannot be real acidic, though, because that irritates his mouth.  He is starting to get sores in his mouth, also, from the treatments.  The nutrionist has told us that maintaing weight is the most important right now so they aren't so much concerned with just eating healthy.  They want him getting in enough calories to maintain his weight or else they will give him a feeding tube (which is very common).  So, he is drinking lots of Boosts and eating lots of ice cream to try and get those calories in but he did loose 3 lbs last week so we've got to step it up...so here goes!!!  The recipes that work for us and don't work for us...
